These vegetable bolts are a specific type of red vegetable which are grown in Hongshan District in Wuchang. It is crisp, yet tender with a refreshing flavor. A famous dish called Hongshan Bolts Fried with Smoked Pork can be found on virtually every menu in any Wuhan restaurant. The vegetables grown right around the area near Baotong Temple in Hongshan are considered to be the best.

 

A few well-known chain restaurants which serve this popular dish in Wuhan include Little Blue Whale, Wuhan San Wu, Yan Yang Tian, Hubei San Wu, and Fu Sheng. They all have multiple branches established throughout the city.
